I just find it better to let it do its own thing others think it's better to stir it in at the end of the day it's all just so the yeast gets enough oxygen.

I have found that if i pitch the yeast on top and leave it alone without stirring it at all it ferments out just fine.
I reckon just let the yeast do what it has got to do.

The sg is specific gravity and is controlled mainly by the ratio of water to sugar in the wash read under the wash section in the parent site or look up a forum topic relating to the starting sg of a wash.

If i am reading the second paragraph right you added the yeast and then boiled the entire mash, if this is so you would have killed all your yeast and the mash would have gone off.
