For me I would ferment on the grain. I do a stripping run then a distillate run so on the second ferment I do a sugar wash and add that back to my grains from first run. I've had good luck doing it this way.

Question about malting corn,
Those prices are expensive so would 1lb of corn be one pound malted? I mean if I do a batch with 30 lbs flaked corn would I replace that with 30lbs malted corn?

Sorry Prairy, I thought running heat under thumper was optional type of thing. I figure Ill go ahead and use a 2" coming in with a perforated (many smallish holes) stainless piece to create many bubbles instead of one big one come out the input side of the thumper. I guess Ill just use low heat...

Thanks, I thought about the over filling of the thumper as well. I figured is what I could do is put a sight rail on the side of my thumper and if it gets to full just turn up the flame under it a bit more to evaporate a bit more to bring the level down and or turn the burner down a bit on the pot. ...

A question about thumper design
I'm planing on running a 25 gal. pot and running that into a 5 gallon thumper. My question is what should be the diam. of the inlet tube to the thumper from the pot? Should the inlet and outlet be the same size diam.?

I keep about 250ml of foreshots on the stripping run and about 300-350mls on the spirit run and that's on 5 gallons. Then keeps every thing else for the spirit run from the stripping run. On the spirit run I I'll take off about 600ml plus of heads. It all depends on smell and taste.

I don't consider it cheating at all Odin. Some might, but what it all comes down to is making a product taste the way you want it to taste. If adding corn to a low-wines run does that so be it. Really, would other people be able to tell that you added corn to the run...I don't think so.

It might be a waist of perfectly good corn, but what I was thinking was that it would give more flavor. It wouldn't necessarily have to be corn I mean it could be what ever grains you are using. Thanks guys for your input, Ill add it to my collection of Low Wines. My whole plan was to take a quart from each run as drinkable shine and save the rest for my distilit run, but its only going to come out the spout at about 45% at best and taste a little to raw for me. Yah I guess their you have it, get a mash tun and brew it like beer, one thing though should we still bother with the boil for 60 min after mashing? Were going to distil it any ways..
