7G of calcium carbonate into tap water seems to be a bit much to me. I could be wrong though. If this is your 5th generation, are you using any backset from your still or lees from your previous wash? If so, then your wash will start out pretty acidic and 7G of calciumm carb might be perfect. If not...

Im with you on this one BD. I was 29 when I had my first heart attack. I had been living a very active and healthy life and then I took a desk job. It basically snowed in my veins at that point. I put up 30# of grains....with enzymes with 30# of sugar and topped up to 30gallons with water. This takes over 2 weeks to ferment out. The yield is lower that I would expect. Just finished my first all corn run. My corn and brown sugar SG is at 1.0 and still bubbling. Maybe a couple more days and I'll rack to clear and degass. I have the grains bought and milled for a 60% corn, 25% wheat(malted) and 15% rye(malted.) Trying to decide if I want to add sume sugar to the mix...

would using a rubbermaid container cause problems as far as contamination. homebrewing for dummies says white hdpe only. Sorry to bring this one back up from last year...just stumbled across it. Mud, have you used Red Star's PC for all grain? There's a huge price difference between 1118 and PC and would love to go on the cheap here.

I'm using a 50# bag of cracked corn from TSC in Nebraska as well. With enzymes, I have no problems at all with it fermenting. Seems like a clean bag....only found a couple short lengths of straw.

New to the site and new to distilling. Trying to learn as much as I can before I get started. Looking to ferment grains, fruits, cheap wines, sugar and about anything else. Considering an 8G milk can with a 2" dual purpose tower. I like the idea of using the same rig for pot and reflux methods....
