I routinely invert the sugar for any sugar wash - almost always All-Bran. It just works for me and my ferments are very consistent every time.

Just for what it is worth, I sometimes get a very light blue tint after adding baking soda to my low wines (All bran wash). This is done in a stainless pot, no plastic. I dilute to ~30% with my well water and have no real idea what effect that has, if any. I think I add about one tbsp per gallon. I ...

For spirit runs I set up the night before, because my Boka takes a good long day to run through 10 gallons of low wines.

If it is a strip run or a pot stilled liquor I don't bother setting up early.

I switched out my copper mesh for lava rock and am happy with the result. Yes, you do need a screen or something at the bottom of the column. Same dilemma here. Mow or still work. Still work won out and I started two 5 Gal. batches of wash. Rain predicted tomorrow but that's OK since I have a long Boka spirit run on tap. Might get to mowing Sunday. Or not.

Personally I use a medium char on the oak sticks I use for my apple brandy. You could try one jar just toasted and one toasted and charred and see which way you like it.

Gin is a good quest. It is my favorite, but I have not yet been able to come up with just the right mix of botanicals. My method is to make a good neutral running Rad's All Bran through a reflux still then re-running it through a pot still with a gin basket in the riser.

I use some backset in most of my washes to help keep the Ph in a reasonable range. If making a flavored spirit like whisky or brandy I use some backset to dilute the low wines to around 30 percent for the spirit run. The only thing I check for is mold growing in it. Since you are going to do a few UJSSM washes anyway, consider substituting half the corn with cracked rye for a pretty passable faux rye whiskey.
