Re: Learning to Toast

This Rye is amazing. After three weeks on Oak the color and smell and taste are something to be proud of. There is not so much as a hint of soot on the nose or palate. Having through about this a bit over the past couple of weeks I think I may have gotten a bit lucky. First of all my base spirit is ...

Re: Learning to Toast

Thanks for the words of encouragement and warning! I will certainly post my results to this thread over the next months/years.

I live in New Zealand (an expat from the states) and have not run across Oak in over a decade. I think I will just put some of the off cuts outside!

Re: Quick NOOB question for Wineo's Irish Wiskey

Yes and no. I put everything together took the SG reading, figured I needed another 5 liters of water to get it to 1080. Put in the water and then broke my hydrometer as I went to get the new measurement. The issue is when Wino said "two buckets" I assumed the volume would be pushin...

Re: Learning to Toast

I just found this series of posts the day after my first spirits. I obtained a few off cuts from a local cabinet maker in exchange for a promise of a bottle. I took the oak home cut 'em up into 4" lengths and then torched them with a blow torch until they started to burn. Stuck each in turn int...

Re: Rye bread whiskey

Odin, Thank you! I have two 30L fermenters with the 3rd generation of your rye bread whiskey recipe. I had saved the low wines from the first two generations which I ran through a spirit run this last weekend. The results were fabulous 10L ranging from 85% to 60%. Tonight I went through all 26 bottl...

Re: Quick NOOB question for Wineo's Irish Wiskey

Another Noob question on Wineo's Irish Whiskey. I put down my first batch of Irish Whiskey yesterday. With the exception of the flaked rye (as I was using backset from Odin's Rye bread whiskey) I used the grain bill to the letter. When I opened up the cooler the next morning I was surprised to see t...

Re: Store Bought Flavoring- Whats hot & whats not

The other day I was comparing store bought bourbon (37.5%) with mixed bourbon (45%.) I am sad to say that the store bought tasted better. But after a few sips I started to realize that what was missing from the mix was tails. My vodka was too pure. :) So I put in a bit of the tails and it greatly im...
