If i was to make "scotch" id not be concerned with over peating ,,Id make a batch of peated and "age" and make a batch of unpeated and age, then "blend" to suite. That makes a lot of sense really. You could well end up with a whole range of whiskies then... depending o...

Gidday! Nice to see another cantab here. I'd love to see some pics of your gin head if you happen to have any? Also, where are you getting your malt from? Cantab power! Haha. yeah, I'll try and dig up some pics. Are getting my malt from the Dunsandel dude. Can't complain at NZ$50 for 30kgs of malt.
