Re: Malt Recommendations for Scotch?
If i was to make "scotch" id not be concerned with over peating ,,Id make a batch of peated and "age" and make a batch of unpeated and age, then "blend" to suite. That makes a lot of sense really. You could well end up with a whole range of whiskies then... depending o...

Re: Malt Recommendations for Scotch?
dude, i'm going through the same process right now, though aiming for a reasonable peatiness :) what i've discovered : the 'islay' malt grains are peated at around 50ppm. The peated brewers malt you can buy (ie, bairds peated brewing malt) is not even close (i've heard a few numbers bandied about, b...

Re: my malt dryer
Brilliant! Question. Did you slow down the rate that the dryer rotates (and hence the fan speed too if they're driven off the same belt)? I've been scheming a similiar plan, but to peat smoke pre-malted grain for use in scotch. General plan is to pipe the inlet air from above a small peat "fire...

Re: NZ Made
Rude boy, I have dug up the photos and the name of the plant I was talking about. it's called Horopito. here's some thats not completely... ripe? the leaves haven't gone as red as they go. P6010169a.JPG I reckon this would be a good component for bitters. KS How funny. Last year (roughly about the ...

yo! Just introducing myself, another kiwi to the mix here. Disiller, brewer, dabbler of sorts, and now a founding member of a whisky club. I've been hanging around this site for a while, and used the incredible resources to construct my new still monster (50litre boiler, 1.2m tower into a modular st...
