I've been searching through my old formularies and distilling manuals looking for Crème de Noyaux. So far there's very little. Has anyone here made it or have old recipes for making it in the Books of Lore?

My concern is pectin. To say quinces are high in pectin is like saying pulled pork is high in delicious. Pectin -> methanol.
Am I being paranoid enough or too paranoid if I add pectinase to the wort?

Bohunk, there are about a dozen small distilleries here in Portland. I'm pretty sure that all but one or two of them were 'shiners for years before they got that license.
