metallic taste in the output
So I have done this, successfully, a number of times over the years -- same equipment, same mash recipe. My last couple of runs were absolutely horrible, taste wise. The spirit has a metallic tang to it, like some chemical reaction. There is also a bit of bitterness to it. All and all, its not drink...

trying to puzzle it out -- how do you make alcohol smell like honey? I make pretty good vodka -- soft and smooth. what i'd like to accomplish is a smell of honey on top of it. I had seen honey vodka -- slight tint of yellow, and aroma is heavenly. any ideas how to get it done? I had tried re-distill...

i had made mead for the first time. I had used 10 lb of real honey, wine yeast, peeled some apples into it for good measure, filled it up with water in a 5 gallon bucket. what do u mash in?
Folks, what vessel do you use for the actual cooking and, more importantly, how do u keep the temperature constant? I have seen electric 10 gallon pots with a cover and a thermometer gage, but its over $300 plus shipping. Any advice? I want to do corn and potatoes.

what should gin color be?
I am macerating some botanicals for the very first time in 78% ABV jar. I have dropped 2 tablespoons of dry juniper berries into it, and a few hours later, it looks kind of yellow-ish. Still crystal clear, but yellowish. So how is the store bought gin crystal clear like vodka? they don't use berries...
