Re: Slowed way down
Did the same thing 2 years ago, except this is my first post in years, I was stilling every weekend, always had mashes going and built up a nice stockpile of aging shine. I burnt out on it for a bit and have only made 2 runs in those past 2 years. I quit drinking for health reasons about half a year...

Re: uncle jesse's simple sour mash method
Hello, Maybe a silly question? My first 2 gens of Ujssm took 2-3 weeks to finish and I ran them before the mash had cleared. I have since added a fish tank submersible heater inside my fermenter to keep temp at a constant 24c. (I'm in Ireland and it's cold here!) This has finished my ferment in 5 d...

Re: Making maple syrup
Got my first 7 quarts of syrup cooked today. Past couple years it's been about 32/1 ratio, but with the early spring here and maybe other conditions beyond my knowledge I'm getting about 40/1 ratio. This is the earliest I have been able to tap trees here since I've been cooking syrup. Used the sap a...

My cloud is winter. I can't do anything in the winter here, my condensor freezes up so Stilling is a spring, summer, fall thing. And half of spring and half of fall are pretty much out of the question also.

I started searching for info much the same way as you, and built one of those world class stills, and then built the second design because I found this place and found out that the first design sucked...( and I do love my Nixon Stone) I read for months mostly on the parent site before joining, and n...

Re: All Grain Pilsner
Interesting making a whisky with pilsner extract. The preboil should help prevent boilover in the still. I get Avangard German Pilsner malt for 48 bucks a 55 lb. sack. The cider taste might be normal and covered up by the hops when used in a beer. If you want it to finish at a lower SG. you could se...

Re: distilling heads & tails
Here is where your taste, smell and feel are needed to judge what you have. By dividing the distillate in small jars you should be able to tell the difference between heads, hearts and tails. 78 C is where most of my reflux hearts come across. Unfortunatly I get nail polish smell early on, smoothe o...

Hello all. I apologize for using the m word but I was watching moonshiners and at the troy & sons distillery I noticed they were using a clear plastic hose as their discharge hose from the Condenser. Now if it were in any other scene in the show I would disregard it but since it was in a legit ...

Re: uncle jesse's simple sour mash method
Running generation 3. I have about 1/2 gallon of wash that won't fit in the boiler. Should I add this back in to the fermenter for the next generation or is it better to just add water and backset? It will not hurt adding it back to the fermenter. I usually leave at least a gallon or 2 in my fermen...

My grandfather on my mothers side was a runner. Drove shine all over lower Michigan. I have all of my grandparents beer crocks and bottles from my Dads side, they sold beer to survive the depression. Re: NChooch's Carolina Bourbon
What about racking off the originals for safe keeping until the weekend? No problem. When you charge your still, you will get even more settling that you can leave in your fermenter, letting you charge a clear mash. (clear meaning yeast and grain particals settling out, NOT a clear like water wash)...

Re: Birdwatchers sugar wash recipe
Even if you didn't mash the grain, it won't be much different than stilling UJSSM or sweetfeed. I always add a pound or 2 grain to my neutrals to help feed the yeast. Seems to speed up ferment times.Due51 wrote:I mashed the malted wheat for an hour at 148-150. Am I missing something?

The smell of yeast shitting in your drink. No nutrients, way to high starting SG. Yeast is a living organism and needs to be happy in its enviroment. Read up on some of the Tried and True Sugar washes, Like Wineos or Birdwatchers and you will start to get an idea.
