Welcome from another PNW member. Looking at your handle back in 1968 while a college student I worked at Todd Shipyard and was in the Boilermakers Union. At the time we were building destroyer escorts for the Navy during the Vietnam War.

Some folks don’t ferment all the way, I usually do. I also have a BW fermenting and in my fermenting cart it has dropped from 20C down to 17.5. I use an aquarium temp gauge to keep the temp within 5 C. I usually let it go a few extra days before distilling it and without checking it I am guessing it...

Welcome to HD, unfortunately none of us have 100% of the answers. I also love my rye whiskey and make it using Jimbo’s Single Malt AG recipe substituting the Barley for Rye and reducing the percentage to accommodate my fermenters and still size. Good Luck.

Centering rings are not needed. I tested and built my own copper packing and have been using it since 2012. Not sure I am ready to jump into vacuum distillation but I do use a vacuum in my vacuum filtration system and am wondering if I can use the same pump for both. Will have to do some research.

Should add that I was a bit surprised to find small chunks in the bottle considering the abv. Also it had a bit of a licorice smell and the color was a mellow yellow similar to a citrus vodka. Anyone familiar with the vodka that can explain if any of this is natural with the vodka?

It’s a good idea to remove as much of the pith as possible but with oranges, tangerines it is not as critical as with lemons.

Welcome, I went from a 2” VM to a 4” CM and never looked back. I went from 12 hour runs to make basically a neutral to 3.5 to 4 hour runs with much more flexibility in products. Good luck and enjoy the journey.
