Welcome, MooseMan hit the nail on the head, you are starting the same way I did when I first got started. I decided to build my very first still with very little experience soldering so I chose to build it starting with the easiest part to solder first. Enjoy the journey it’s a great hobby.

Google solera method for aging. You can use barrels or jars, I used a combination as I didn’t have 3 barrels at the time I started using the method. It’s a rotating method so you never fully empty a barrel unless you take a break from distilling.
