+1 deezil, bout 4 or 5 inches in the bottom of a 6 gallon bucket does just fine for me. If your an over achiever though the calculations above will work too!

I do it the same way as Dakota snake. Keep a little from the middle to quench my thirst until I get up enough low wines for a spirit run. Only time I single run is if I'm making brandy and thats cause I want max flavor.

No need for a thermo on a pot still. Dont worry about the temps, put the heat to it and when you start gettin product back heat down until you get a solid/broken stream if collecting for drinking. Another option is too do stripping runs until you have enough low wines for a spirit run and dilute the low wines with backset from previous runs. Which is what I'm about to do with Odin's Cornflake Whiskey recipe. This will add some flavor. We could go on and on, the possibilities are really endless!
