Re: Wineos Plain Ol Sugar Wash

It sounds like its going fine. You need to just let it do its thing, and let it clear.Clearing it completely makes a big difference in the finished product.Once the fermentation slows way down, wait for a week, and rack it to a clean container, making sure to splash it quite a bit, while racking, and make ...

Re: Wineos Plain Ol Sugar Wash

Yes,the citric acid is just for PH adjustment.Lemon juice works, but will leave a little flavor. The citric wont.

Re: Wineos Plain Ol Sugar Wash

Thanks for the replys guys! You have a real BAR? Thats one cool piece.I picked up a M14 a while back. Its all snipered out! Aint been shooting too much these days cause the ammo prices are through the roof, and Im too busy to fire up the reloading equipment. I did finally do a XXXX run on this recipe....

Re: Wineos Plain Ol Sugar Wash

I havent been around for quite a while, but Im here now! One thing that can cause your problem is the PH of your water,BEFORE you make any adjustments. My measurements were all based on my water, and my waters PH is 7.0.Either your water has a lower PH,and adding the citric acid makes the PH go so low,...

Re: Wineos Plain Ol Sugar Wash

If you can,I would do a single run with little or no packing to get the best flavor.Dont push it too much or you will run your flavors together.

Re: Wineos Plain Ol Sugar Wash

I have made these washes with alot of different variations, and I will try to break it down for you all. Raw sugar gives a little rum flavor, and a little more heads and tails. Molassus{one jar of grandmas} and raw sugar makes a nice white rum. White sugar and a jar of molassus also makes a nice lite ...

Re: Wineos Plain Ol Sugar Wash

Add some calsium carbonate{slowly} and stir it every day,for 2-3 days. That should get it going again.Next time cut the amount of acid your using in half. Its probably your water.Once you figure out how much acid to use for YOUR water, you shouldnt have anymore problems. The carbonate settles,so stiring...

Re: Wineos Plain Ol Sugar Wash

The fermax will do fine, but the 1118 probably wont.Go buy a jar,or brick of bakers yeast, and use a 1/2 cup of it.It will do better on this recipe.Save the 1118 for something with more fermentables in it. :D

Re: Dried fruits question

Using them for macerations is ok,If it doesnt bother you.Running it through the still, some sulfites will carry over.{flavors} I dont use the dried ones, but im sensitive to sulfites.I have used canned ones, but I put them in a non-stick pan,and baked them in the oven at 300f until they dried up some.I...

Re: Wineos Plain Ol Sugar Wash

I think you gave your yeast a fatal dose of sugar in the starter.I use a 1/2 cup of sugar in a gallon starter.Your yeast is not dead, but it might as well be,because it suffered osmotic stress, and its permantly damaged.Dont worry, just pinch more yeast, and if you make a starter, dont use very much suga...

Re: Wineos Plain Ol Sugar Wash

It sounds like your right on track.Did you use the amount of yeast the recipe calls for?Depending on your water chemistry, and alot of factors, you may,or may not get the violent ferment. The key to success with this recipe is to follow the recipe to the letter, and dont add or change anything.I usually...

Re: Brown Sugar Wash?

I havent inverted it on these brown sugar and molassus washes.I ferment mine at 1070sg with 2 cups of red star{in 24 gallons}and they ferment like hell with dogsheads on the 2nd day.Since I started doing lower gravity ferments,I stopped inverting.

Re: Wineos Plain Ol Sugar Wash

It sounds like you saved it!For these washes to ferment clean and fast, you have to keep the starting gravity under 1080sg,or lower, and keep the additives to the minimum, and use a large amount of yeast. You should be able to find red star bakers yeast in 2 pound bricks for cheap locally. It does fine,j...

Re: Wineos Plain Ol Sugar Wash

If you can,get 2 more containers, and rack 1/2 of your stuck wash into each bucket, then fill them both with water to top them off.By dropping the gravity, they should work, but your yeast thats in there is stunted,so add more.If you can,buy a pound of bakers yeast, and put a 1/2 cup in each one,and dont...

Re: Wineos Plain Ol Sugar Wash

The dextrose{corn sugar} will work just fine, but you would want to use an extra pound of it.IMO,its not worth using because of the price.Dont get me wrong,it will work fine, and it may make a little smoother drink, but theres not enough difference to justify the cost.I have tried it,but bought a 55 po...

Re: Wineos Plain Ol Sugar Wash

It restarts good using molassus, but molassus is loaded with neutrents, and they use molassus to make bakers yeast.
It dont restart good with plain sugar because of the missing neutrents I guess.

Re: Wineos Plain Ol Sugar Wash

The 1118 would ferment just as fast if you used the same amount, but 1118 gives a stale taste IMO.If you like the product taste using bakers yeast, try the distillers yeast. Its more neutral, and clears better, and faster, and responds better when re-used.When I get one going,I just use it over and over.T...

Re: How much sugar?

What Punkin said,
If you have a barrel of grapes, you dont need any sugar at all.Just use 4-5 packs of wine yeast. You should get some 8% wine that will make a real nice brandy if you clear it.

Re: Wineos Plain Ol Sugar Wash

First of all, thanks for the compliment. It sounds like your water is plenty hard,so skip the gypsum.I add the acid to a cooled down wash.I usually add everything else to the hot sugar water mix,and add cool water to cool it down before adding acid, and yeast.I wouldnt pinch your yeast any warmer than ...

For raw sugar in the states, look for the Zulka brand. Its from mexico, but I found it at walmart in the ethnic food section.
