I used to do most of mine in the winter because of being too busy with other outdoor stuff in the summer. But as I get older and don't do as much as I once did, I prefer summer. I use propane so I run the still out in the yard which is much more pleasant in the summer. OMD

Just a thought jonny, I built my shed with a 10' ceiling, gives me room for a lot of shelving plus the height for tall columns. Have fun.

On the other hand Still Spirits makes a line of flavors just for what you are talking about. They have almost anything you can think of, I have used a few of them with great succes...
