Thanks for the suggestions. I took a gravity reading and got a little over 1.060. I'm not sure how well that will work as the grain is still in the fermenter but It'll surely be close. I pitched half a cup of yeast on 25 gallons or so and in a few days I'll run it off and then refill with sugar wate...

What are y'all paying for corn. I just picked up a 50lb bag or cracked corn for $15 or about .30/lb
Is this about right or am I paying a premium for living in a densely populated area?

Unfortunately you wasted a packet of 1118. The sediment is loaded with yeast, you don't need to pitch on top of it. You might want to boil then freeze some of the left over sediment to kill the yeast leaving you with yeast hulls which make for a great nutrient for next time you want to make somethin...

I guess I'm wondering if I should even use the water cooler for my mash. Sounds like you want to simmer the corn for 30 minutes and then add to mash tun with grain and then mash like normal (also adding enzymes I would guess at this time). I think that you do, in fact, want a valve before the condenser. This way you won't be wasting your cooling water condensing vapors that should be refluxing as vapor. If you're getting overflow from the condenser you'll actually be a LM column, which isn't bad particularly but be sure to put a beak ...
