I just completed a beer stripping and according to the book i am reading it says my still-head temp should be at 78 c. my temp settled in right at 89c. It's a little different at altitude, my water boils around 195*f/91*c so I sometimes chuckle a bit when I read things like the "no boil corn" recipe that says heat to 200*f.
