When I eat at home I never use any kind of sauce. I like the taste of most food as it comes. Same when I go out to eat. I tell them to tell the cook NO SAUCE. I think that with a good tasting "sauce" it makes little difference what it's one. All you can taste is the sauce. I love the taste...

OK, Checked the SG yesterday (Sat) and it was down to 1.010...not bad..that's about 7% ABV. Just might run it /wed. Think I'll cold crash tomorrow morn.

Finished for the day. Total time including clean up about 25 hrs. Here is/are the rest of my notes. 9-After 15 hrs overnight temp was 137* Dumped it into a a 6 gal boil pot and added 2 gal of 115* water. SG was 1.020 10-Mixed well and brought temp up to 130* and let sit for 30 min. SG=1.026 11-Mixed...

Here's a great image for you that shows enzyme activity vs temps. Your temps are quite high for any conversion to have taken place at all. I believe both your 2 row and your alpha amylase may have been denatured by the high temps. Unless of course you may be using high temp amylase like SebStar HTL...

Working off NcHooch's Bourbon AG recipie I started late today. Here are the steps so far: 1-Boil 2 gal water in 4 gal pot--------------10 min. 2-In 3 gal cooler w/paint strainer bag mix 8 lbs of crack corn w/6 handfuls of rice hulls - mix well 3-Add boiling water and mix well. Picked up 8 lbs of crack corn today for $0.89 a pound.

3 lbs 2 row = 420 DP points divided by 10 lbs total grain = 42 DP avg. THats fine. You need about 30 DP avg to get consistent conversion. Even the extra pound of rye (or wheat) would be fine 420/11 = 38. Personally Id add 2 lbs wheat. 420/12 = 35, still good. Thanks Jimbo...cracked corn is about 5 ...

I'm ready to try this out. But I can't get 6 row malted barley and the recipe calls for:
Grain Bill: 7 pounds cracked corn; 3 pounds crushed 6-row malted barley (optional 1 pound malted rye)
I bought 3 lbs of 2 row.....So how much should I reduce the cracked corn????

Thanks for the replys. It's not the first run for the column only the boil pot. Still think it's a dumper? I've distilled 5 or 6 patches thru the column using the 5 gallon boil pot.

Bought one at Home Depot the other day it was 6 gal and the same diameter as my 5 gal pot so the cover of the old one fit just perfect. Interesting making a whisky with pilsner extract. The preboil should help prevent boilover in the still. I get Avangard German Pilsner malt for 48 bucks a 55 lb. sack. its not the same as 10 pounds of crushed malt. It's been through a process. I'd just put it down to that. Thanks cb....Bought a new SS boil pot from COSTCO today. It's 6 gallons and is the same diameter as my 5 gallon pot so gasket and column will fit just fine. Cleaned the new pot and racked about...

Checked today after 26 days in the fermenter. Beersmith said FG should be about 1.019 and I hit 20. So I guess it's done. ABV should be a bit over 7% which is ok. Question si I tasted the sample and it seems like it had a cider taste. Any ideas? Would run it today be the weather is to nasty to be on...

Went into the frementing freezer at about 63*F for about 10 days, then began upping it a few degrees every day or so. It's up to 74 and still bubbling every 30 sec or so. Hope this comes out ok.

Hey Brooklyn and ThePatient1, LME/DME that is manufactured for producing beer will have more unfermentable sugars than we as distiller normally deal with. I've heard this can cause more than the usual amount of foaming to occur. When you distill, keep an eye out and tell us if you notice more than ...
