Another option is to use Taters fruit wash recipe in the same section. I have used that recipe with plums, peaches and pears, all with excellent results. No more rum for me. The take jar was pretty good this year, coops. Better than last year, came back with nothing. This time got a good haul of blues and a large yellow. The best aspect of this is that I have finally found the lode that I have spent the last 4 years searching for. Something to look forward to next year....

Yeah, pretty good year this year. Commercial mies extract gold, coal, tin,lead and iron ore. We small blokes do gold, opal and sapphire. I mine sapphire in Queensland over the winter, then come home and cut them over the summer months.

How did the pear wood finish up, rum? I used pear in some brandy I made and it gave the spirit a golden colour and a a sort of 'sweet' flavour. Which ever of the fruit trees you decide to use, my advice is to cut them into the desired size when they are green, or freshly felled with plenty of sap still in them. I have my greatest results by syphoning the finished wort off fruit washes ala tater and just adding water and sugar to the lees. Goes off like a cracker and gives a great product. Made over 50 bottles of plum brandy and well on the way to exceeding that with pear brandy with this method. Still havn...
