When I first started out distilling that is all anyone used , it works just as well as citric or any other acid and if used hot n fresh is even faster imo.

As for the stop and start of bubbles, you almost have to have a small, intermittent leak. Yeast does not stop and start fermentation unless temperature is swinging and it is not swinging that much in an hours time. 100% agree , there is a leak....the only sure fire way to tell if it's stopped ferme...

Or you could possibly use Yellow Lable Yeast......just need to get the water, yeast ,grain, molasses ratios right......shouldn't be too hard to figure out.

I can see now from SBB comments on 3.25 LPH at 3 inch vs my 750ml - 1.25 LPH at 1.5 inch ....I just didn't know I dont think it was me that said that , most people i know will run a 4 pate 4 inch column at between 2 and 3L an hour, the still will be producing at about 92% abv at that rate. Yeah something real strange going on there, the inside of that flask must be coated or lined with something.

More plates would help, if what you kept for drinking had
" quite a bite" it suggests that maybe you need to make better / tighter cuts.
