Maybe I'm a little blasé when it comes to pukes after playing around with molasses washes for so long.
On the occasions that I've mixed LME into UJSSM ferments I don't think it was to bad, just had to be a little careful.

Don't put ice in it, just cool water, your shock cooling the vapour, that is partly the problem.
It will also run differently with alcohol in the boiler, no still ever performs the same with water and vinegar in the boiler.

I wouldn't run 40% low wines in a pot still for Rum I'd be inclined to run lower abv, something that will average out to barrel strength of around 62-65 %

I'm still trying to find a useful source of American oak here in France so that I can compare I've found these to work very well when pre oaking/ aging in stainless or glass. I agree Swampy, French to me always has seemed to sweet, that's why I've always prefered to use medium toast American oak.

I'm not sure how you've managed to get a stronger tasting Rum from treacle than from blackstrap.

Cutting the low wines to 28- 30 % ABV will make for a better end result.

That was what I was thinking to Normandi, canned beer kits already contain the hops, where as cans of LME don't have hops in them.

Are these actually beer kits in a tin, or just tins of LME.?
Both are available, both look very similar, both will give very different results IMO.
I've only ever used the tins of pure LME.
