Re: Running various unknown stripping runs....
I would mix all of the jars AND mix the feints in, dilute if needed and run it, depending the size of your still you could have enough for 2-3 spirit runs. I think there is a good chance you will surprised how good it will turn out. Some of my best whiskey runs have been feint runs.

Re: Adding to backset
I will strip my Shady's Sugar Wash in the next couple of days. My next run in a couple of weeks or so will be a Irish Whiskey with a Raw Barley, Malted Barley and Oats grain bill. I have no All Grain Back-Set on hand and in the past I have done a small 7 gal run of All Grain just for the back-set to...

Re: Shady's Sugar Shine Stall
Update on my wash. Just checked the wash; Ph holding at 5.00 and SG now at 1.0, actually just a hair under. I will let it go over night and will do the stripping run tomorrow or Sat. I suspect that given the problems and having to add all the crap to the wash I will have to do more runs than normal ...

Re: Shady's Sugar Shine Stall
I have never, for no good reason, liked the idea of adding tomato paste to a wash. I didn't have DAP on hand, but did have tomato paste so I used it. My other sugar washes have been Wineos Plain Ol Sugar Wash which all turned well for me (in spite of not having DAP)

Re: Shady's Sugar Shine Stall
Really didn't measure the yeast that I boiled, is there a guideline? The only reason I used tomato paste is because I have DAP and had tomato paste on hand. For no good reason, I've never liked the idea of putting tomato paste in a wash. For the few sugar washes I have done I used Wineo's recipe and...

Re: Adding to backset
Are you guys referring to using hot back-set to preheat a wash or a mash? 95% of my All Grain mash are sour-mash and already contain back-set, I usually use about 20-25% back-set and mix it in with the water before I "cook" the mast. I just like the taste of a sour-mast whiskey. I don't th...

Re: How to best measure ABV of spirit coming off the still?
Many of the "old school" guys eschew the use of thermometers or hydrometers when distilling and claim to go only by taste, smell and feel. I have taken a different approach for the last 8-10 years. I run a pot still and in my spirit runs I place a digital thermometer at the top of the colu...

Re: Shady's Sugar Shine Stall
No I don't think so; when I got back in town I saw no signs of activity. The first thing I did was a "taste test", the wash was sweet tasting as day I dissolved the sugar. The last few days the sweet taste is gone. A hydrometer is not that hard to read and I been using one for years. When ...

Re: Shady's Sugar Shine Stall
I have never had DAP so have never used it (I do have some on order alone with potassium carbonate and citric acid). I have done 3-4 sugar washes and a butt load of All Grain mash's with very problem. I have mixed together "yeast bombs" several times. IMHO, the boiled yeast and tomato past...

I didn't have any DAP (I now have on order), I used boiled yeast and tomato paste as nutrients.

I just referred back to your recipe where you advise " 1.50# sugar/gal water is the upper limit. I ended up at 1.67 #/gal. Could this have caused the problem?

Re: Shady's Sugar Shine Stall
50 lbs sugar, I think your recipe called for 45 lbs/30 gals. I just used 2 x 25 lb bags. Double pitching yeast, All plus all that baking soda and gypsum I used dicking with trying to get the Ph right... could that account for the high SG?? As mentioned, I have been distilling All Grains for around 1...

Thanks for your post, will check later tonight and advise on temp, Ph and SC Note my question on dead yeast: I suspect the same but wonder if the dead yeast will act as a nutrient, if so, can you have too much nutrient. When first mixed I added boiled yeast and also some tomato paste

Otist Thanks for your reply. Both times I checked I just tasted the wash and it as sweet as first mixed. Tonight I will taste the wash and also check the SG. Will also do another yeast bomb and re-pitch. Another poster felt the Ph of 8 killed the yeast. I suspect the same but wonder if the dead yeas...

Shady's Sugar Shine Stall
Mixed a 30 gal batch of Shady's down, followed the directions including oyster shells. Left town for 3 days, came back and checked. Nothing! i used Distillers Yeast I got online and thought it may be bad so I re-pitched with my go too Fleischmann's, checked it the next and still nothing. I didn't ha...

Re: Barrel Sized Wort Chiller
Looking at the picture using your wort chiller it appears the barrel is still insulated; if so, that's really slowing down the chilling. I use Big Brute 32 gallon trash cans to ferment. I wrap an hot heater insulating blanket around it while fermenting, but take it off after it converts to cool it d...

Re: moving to a larger fermenter....30g
I have 32 gal Big Brutes for years and never had a problem, Lowes, Walmate, ect carry them and they are not that expensive. I run a 15.5 gal Beer Keg pot still. After I squeeze the grain I have two 12-14 gal quick stripping runs
Good Luck

Re: Strange Spirit Run
I used my usual Fleischmann's, I am in the Deep South and I've had good luck with it. It handles the Souths heat well, is cheap and easily found. The mast was a sour mash (back set from the previous bourbon)and I added a gal of fresh mash to the stripping run. The mast worked dry after about a week ...

Re: Strange Spirit Run
squigglefunk It was a run of my normal wheated bourbon that I did a poor and way too loose job of cuts (just didn't take my time). I went ahead and charred the whiskey. When it came of the keg I could taste heads. I knew it was heady after the cuts but I was hoping the keg would settle it down. Y'al...

Strange Spirit Run
I did a Wheat whiskey mast of 60% Red Winter Wheat, 25% Corn and 15% Malt, the mash went down to a hair under 1.0 and the stripping went fine as well. I did the spirit run yesterday and ended up with mostly heads. I ended up with 24 pt jars. I ditched a pt of hot shots. No. 1 was 70 proof, No. 2 - N...

AG Mash Cap
As most of you know, when fermenting an AG mast a cap usually forms. Often my caps are quite thick and a few days in the top layer of the cap is dry. Would there be a down side in removing the top, dry part of the cap (or even damp grain). The up-side is having less grain to remove from the mash, af...

Re: If one wanted to do a give away for free and winner had to only pay shipping how would one do this?
My advice
1) Get the still and equipment and hide it.
2) Take some time and think about it. It's an emotional time: don't do anything you may regret later.
Good luck

I run 3 Gal No.3 char Gibbs kegs; I took a couple years off during Covid and in the few days will do a spirit run of a nice 70% corn,15 red wheat,50% malt bourbon mast. Re: Kentucky Style Pot Still for small Gin Runs
I have had good gin results with my 15 gal pot still by putting a ball of copper mesh on the top and bottom of my botanicals that I have ties into a ball of cheese cloth and running a clean neutral through it. Easy Peasy. The hardest part for me is deciding which botanicals to use. Good luck. Bota G...
