I sure am glad I found this forum and this recipe. I just finished sipping on a glass of two year old UJSM that is the finest whiskey money can buy! Incredible flavor after being aged on oak for a year before bottling.

PJD, How long did your ferment take using all of the backset? A week and a half or did you get that rapid 3 day ferment once you added the calcium? What PH did you adjust to? well generation 5 was run today. This is the fifth run of using 100% backset and adjusting the ph with Calcium Carbonate. Very compact heads, 8 pints of hearts then about 2 pints of tails. I ran my second generation of the UJSSM. I have thrown out my first half pint on each run and started checkin the proof every half pint there after. my first keeper pint was about 120 proof and I keep it down to about 70 proof. The only way I would be able to get 140 proof is if I kept the foreshot...

Well I just ran my 4th generation UJSM. I threw out the first pint then saved everything down to 140 proof, got 12 pints then ran the rest into a jug down to 10%. I let it air out for 24 hours , tasted each and kept it all! Mixed together it is 150 proof with a lot of flavor! I added american oak ch...

I just ran my first generation UJSM. WOW! This is wonderful stuff. I started it in the fermenter that held DWWG and used one gallon of back set from the DWWG.
