If you go with 2 elements make sure you position your upper element low enough that it won't go dry on spirit runs if you have to start and stop.

Its always a crap shoot for me if my upper element is still in the low wines after starting and stoping a couple times.

Do you have a hydrometer? If you don't then you really need to get one. You'll be stoked. When you do get one just to a google search and you'll get more info than you want on how to use it. Sounds like your making two different things. I think you should start fresh if your making whiskey.

How are you detecting Methanol?

From what I've learned here it takes a lot of Mthanol to hurt you but its still not something you want to drink.
