Re: What to do with a tree full of mulberries?
I know I'm still new here but I thought I would offer my opinion. Freezing them until you have a big supply is a good idea. By freezing, the water will crystalize and pierce the cell walls of the fruit. Then when it thaws again the juice will start coming out very easily. Half your crushing will al...

How To Cap When Storing in Mason Jars?
It sounds like a lot of you are storing your spirits in mason jars, but how are you closing them? The lids have some kind of white plastic coating on the bottom that I'd be afraid to have come into contact with the spirit or the vapors.

Re: Pugi's Rum or "Pugirum"
At about 62% ABV it was smelling strongly of pralines and toffee and toasted coconut so I dipped a shotglass in the stream and took a shot. It's great! Warming but not harsh at all. Great flavor and aroma. Holy crap, if it is even better after the spirit run and then even better than that after sev...

Re: Pugi's Rum or "Pugirum"
I'm doing my first real stripping run today (did a sacrificial run yesterday of Birdwatchers to clean the still) and it happens to be this recipe. I must say, I was not prepared for the wonderful aroma of the distillate! I could drink this stuff as is, right now. I discarded 200 mL of foreshots from...

Re: New Guy
Yep, though I'm not sure if there are different species in the caribbean than what is typically sold for culinary use. The rum certainly didn't have a savory flavor like I might have expected from an herb used mostly in soups, etc.blind drunk wrote:That sounds real good. Was that bay laurel?

Re: New Guy
Hey, welcome aboard. What good rum did you have in the Caribbean? I was in St. Lucia and tried to taste just about everything they make there. I missed a couple but everything I had was very good. I especially liked the cheap everyday rum they have called Bounty. It's very cheap on the island (like...

Hey Everyone. I'm a long time homebrewer who has recently decided to expand the hobby into distilling. I'm currently obsessed with rum (a trip to the Caribbean recently didn't help) and will be concentrating on perfecting them to start. But as a homebrewer, I can't help but want to create some nice ...

Re: Ethyl Propionate in Rum
Thanks for the great reply kiwi. I've got the hillbilly stills 12" copper pot still head on the way so I'm not sure I'll be able to attain much reflux. I was planning on running the washes through a stripping run quickly, then doing a slow spirit run with the low wines. Since I'm just getting s...

Ethyl Propionate in Rum
Hey everyone, I'm new here. Haven't yet distilled anything but I have a few washes going and I'm a long time homebrewer. I have a bit of a technical question, or possibly the start of a technical discussion so I'll go ahead and get to it. In searching for cheap molasses in my area, all I was able to...
