Re: Is yours really better than commercial?

I was just told by an old distiller two words of wisdom that have had more impact in my last year than all the knowledge I "thought" I had. Cut all your booze to 40%-80proof to serve to others, otherwise you will be seen as that moonshiner and not like you are trying to make a product that...

Re: My Alembic and What I have found...

So I have just finished up a couple more runs and this time it was a grappa style spirit that I will call Grape Rum (due to the pomace and sugar). I used a false bottom, removed the reflux lentil and finished a run in three hours with 3 gallons of 70 proof stuff. It was great out of the condenser. T...

Grappa...tasting notes

You know, maybe it is just me and maybe I am spot on here, but I feel as though I can taste a lot of the copper in my grappa that I made the other day. Maybe Chemist can chime in on this one. I am drinking it at about 65% and it has a taste...not metallic, but similar. Kinda like a metal taste witho...

Re: Grappa Making

As mentioned there are other posts that are far more in depth, but the short answer is: 1. Make wine using grapes and press the skins off the juice. 2. Take the skins from the press, add water and sugar and yeast. 3. Ferment for another month or so till dry. 4. Place this "grappa wine" int...

Re: spirit run theory

Another thing to consider is that running a stripping run slower has the same effect as running a spirit run slower, which actually would put your spirit run that much farther ahead. Not unless you were going to make cuts on it. It'd make no difference cause you are going to use all the fractions a...

Re: Triple distilling

I ran a brandy only once and it came out with great flavor. With whiskey you want flavor as well, so less is better unless you are looking for less flavor. The less times you run you have to pick out only the hearts, the more you run, the more neutral the flavor becomes so do what tastes best for you.

Re: My Alembic and What I have found...

Without the lentil, I too, start to run the water, and begin collection @ 65 degrees, but have never run it past 92 degrees. I tend to collect all the way down to 40 proof. It's easy to throw out the tails later. What size run are you doing and how long is it taking you? Are you finding a similar o...

My Alembic and What I have found...

http://www.copper-alembic.com/shop/images/uploads/72540.jpg I just got two questions in the span of ten minutes asking questions about the alembic that I use and what experiences I have had with it. I know that it isn't the work horse of this forum, though I think that there are enough folk here th...

Re: Is yours really better than commercial?

Consistency is difficult I am sure even for the larger guys. The real thing though is that if I am a consumer and drinking one bottle at a time then I am not going to notice a difference really. Also there is going to be no sign of a change of batches on something like smirnoff. I am running grappa ...

Is yours really better than commercial?

I ask this not because I doubt it, but because I keep asking myself this question. I mean, commercial distillers have nothing but money at hand (talking large ones, not micro) and make a very consistent drinkable product. I haven't ever tasted another home distiller's product and so really only have...

Re: Distilate Amount help

Takes me an hour with propane to heat both the still and reflux lentil. I throw out 500ml to the shots and get a very consistent 150 for about 8L and then it is onto tails. On 25gal at 14%, this is what I get. Finish in 7 hours.

Shiny floaties

As I have mentioned before, I use an alembic with a water bath vacuum around the lid. There are these shiny little floating islands in that water that look the way gas in a puddle does, all rainbowed. It isn't gas there, so what could it be? It is more metalic. This is run number 7 or 8 and I haven'...

Also keep the eye out for PDM (Pris De Mousse) as just named that. All yeast can get pretty high in alcohol, just depends on the nutrients and ferment temp. EC-11...
