So I have just finished up a couple more runs and this time it was a grappa style spirit that I will call Grape Rum (due to the pomace and sugar). Another thing to consider is that running a stripping run slower has the same effect as running a spirit run slower, which actually would put your spirit run that much farther ahead. I ran a brandy only once and it came out with great flavor. With whiskey you want flavor as well, so less is better unless you are looking for less flavor. The less times you run you have to pick out only the hearts, the more you run, the more neutral the flavor becomes so do what tastes best for you.

Without the lentil, I too, start to run the water, and begin collection @ 65 degrees, but have never run it past 92 degrees. I tend to collect all the way down to 40 proof. Consistency is difficult I am sure even for the larger guys. The real thing though is that if I am a consumer and drinking one bottle at a time then I am not going to notice a difference really. Takes me an hour with propane to heat both the still and reflux lentil. I throw out 500ml to the shots and get a very consistent 150 for about 8L and then it is onto tails. On 25gal at 14%, this is what I get. Finish in 7 hours.

Just did a run today and came away with 3 gal of 70%. Very nice. Ran the last gallon down to 45% to put in the next run. happy happy. Now to water down and pass out to friends and junk. EC-1118 is a strain of Pris de Mousse. Any strain of such a thing will work similar. Try Pasteur Champagne yeast, or any champagne yeast.
