Make a third run through your CCVM and sniff the backset.. That will tell you how much tails has been sneaking into your product. I always triple distill for a clean neutral. Heads cut is not necessary or very small.

Absintheurs do the same thing. We should note that neither Fed Ex, UPS, or USPS will (knowingly) ship alcohol for an amateur, but they don't open packages for inspection without good reason.

I use sticky backed label blanks made for file folders. They are cheap and when the contents o a container change, I put a new label on top o the previous one. I think it is crazy to not have a label on every container, no matter what.

I've never had any trouble with USPS, either. I use bottles with T corks (cuz that's what I've got), and seal the corks with wax.

You could prepare your sweet potatoes, however you plan to, put in water to, say, 20 litres, test the SG, and add sugar until you get to the % ABV you want. As indicated by the SG.

I'm thinking I would have more confidence in the study if they would just split a ferment and distill one half with a tight tails cut and the other half keeping everything down to 10% or so.
