aussie yeast

G'day all i'm looking to take my mind off todays cricket results. :roll:
I've been making sugar washes with bakers yeast(lowans)and wineos recepie with great results but am wondering what other yeasts you blokes are using with aussie available yeast.

I've just finished running a 25 gallon batch of wineos sugar recipe(i've done a few smaller ones before this)and wondered after i'd finished about the alcohol % of the wash.The fementer i use is just a plastic 44 gallon drum,my still boiler is a 9 gallon beer keg.So does any body know if the runs of...

Thats my problem i'm still waiting for a couple of bits to finish my still(live in small country town)and i thought i might kick the mash off before i finish the still.

storing mash

I'm just starting out (been reading everything for a couple of months)and have a question.I know i read on here not long ago about storing mash but i can't find it.Can i store a basic sugar mash once it's finished in a spare ss keg.Thanks for any tips.
