And just remember, if ya got a problem with gout, DO NOT DRINK HOMEBREWED BEER OR MALT PRODUCTS without killin' the yeast first! When I started out brewin' beer, this was the first thing I found out! Drank one 12oz bottle and couldn't walk for 3 days! Live and learn!

You prob could, but why not just put sherry in your mash! I don't see an advantage unless you're asking about chips from a barrel that was used to age the sherry. I was always told that the amount of yeast really don't much matter, just the type used. I've used a 1 oz. packet on a 20gal. batch of mash and it worked out the same as using a 1/2cup! Yeast will multiply by itself if it's environment requires it, so actual fermenting time is the same or real close...
