Yea I was hoping that was the case. I worked very hard on this batch for such small returns, albeit what I've learned was well worth the price. Time for a vat instead of a 15 gallon keg :clap:

I aerated the wash real good, added the yeast, DAP at around 95F and she started fermenting like an hour later. She's going like gang busters this morning! Very happy with this wash so far. It was so thick throughout the entire column of the wash, so I couldn't take an SG before pitching. We'll see ...

She's sitting at 120F at the moment. Getting ready to pitch as soon as she gets to 110. What yeast you think I should use Redstar or Flieshmann's? I have both and how much would you recommend for 12 gallons of wash?

Yes, purchased both and neither had usage amounts.

I don't have a scale that can measure grams.. I couldn't figure it out down to teaspoon measurement without a brain hemorrhage...

Thank you heart. From what I've read, it seems to turn the unturned starches that aalpha amylase cannot at the lower temp ranges.

Do you typically use a yeast nutrient like diammonium phosphate?

Hey Wash - I just added the additional alpha and let it sit a few minutes, did an idophor test and its still as purple as Barney... does this take some time to turn?

Oak is awesome to use for smoke. IPA's get a lot of their flavor typically from toasted red oak. Can't be that far off the mark with that french white oak you have there, especially if they were used for whiskey :thumbup:
