Like Bayoushine stated Restaurant depot has all you need from 25 lb bags of cornmeal, 50 lb bags of brown sugar, molasses, large cakes of bakers yeast, etc and at good prices. Just need an LLC with a tax id number and you can get a membership

I just finished up the last of my stripping runs last night on an AG mash. I have 9 gallons for my spirit run on thursday. Should get a decent amount of hearts out of this recipe!!

I wasn't referring to conversions and nutrients. With enzymes I am being very efficient get all the available sugars out of the grains. What I meant is my lowest FG ferments have occured with high OG's as opposed to ferments with OG's in the 1.04-1.05 range. Lets just stick to the thread of recipe w...

I agree on that, but won't matter if your OG was only 1.04. I've had two really good conversions and in both my FG finished at 1.0 while another at 1.045 finished at 1.007. I don't know if it had to due with nutrients, but the temps were the same in both ferments with the same yeast strain.

Ferment inside your house where you can control the temps better. USO4 or bakers yeast may be better for your conditions than say US05 which prefers the temps in the 60's

I wouldn't have bumped up the temp to 168 since you killed the enzymes and stopped any further conversion

Just seeing this post. I think if you milled your wheat more you'd get a better conversion since you stated it was cracked. Your malt will thank you.

IMO if you are going to add sugar to an AG bill, you might as well just do a sugar wash. The flavors are much different between the two.

That is a low SG. I have a feeling you either didn't cook the corn long enough or your corn was more cracked and less ground which takes a longer time to cook to convert your starches. The finer the grains the easier it is to convert your starches also. Did you use any enzymes?

Everything everyone is telling you is spot on. I've screwed up quite a few AG mashes and learned something each time. I PM some guys for help and it is starting to pay off. Bob, next time I'd shy away from adding tomato paste to an AG mash. It could offset the flavor a bit. Tomato paste is more ideal in rum mashes.

Bayou, I don't think it is krausen. Looks more like pellicles. After this is done. I'm going to sanitize everything to the T. Is bleach ok to use as a sanitizer?

Tater I milled at home, majority was milled coarse. Some of the grains slipped through the disc and left whole. I assume that is all of which is floating up top. Maybe 2% of my entire mash, 25gallons. Since it was malted wheat, I got the water temp up to 160 degrees before adding the wheat. Got the ...

Dad, it doesn't have any bad smell to it at all. Slightly sour, but that is expected after 8 days. I'm really not concerned, just have never seen this type of bacteria before. It is the first time I've used US-05 as well.

Yep I'll post when I get home in a couple hours. I don't think I have an air lock issue. As soon as I secure the lid, the air lock startes bubbling within a minute.
