Starch hydrolysis and conversation will continue throughout the fermentation process, also it increases the risk of infection.
Scooping and squeezing the cap also wouldn't eliminate a final squeeze as not all the material floats.

Better option would have been to add more water at the beginning to bring it down to 1.08 or so. But it sounds like to me that this is one of those times when there's just too much out of place with the environment to get it completed. Some good advice given so far and overall a good looking build! A couple of suggestions though for your boiler. Made my first batch using this method yesterday. I added all the corn on the first water addition (65lbs). Kept adding water until all 40 gallons of water were in. Definitely made some clumps on the first addition but they stirred out just fine once there was more water in the barrel. Still at 130*...

There's no reason to age in the cask at 60%, commercial distillers do this to save money on storage. Not sure where you got this nugget from but it's not true. Nothing like that so far really I once added s bit of rose water extract to a gin run to emulate a commercial bottle I'd tried. Otherwise nope.

Bought the cheapest corona mill on Amazon and replaced the handle with a hex bolt. That with my corded drill and a homer bucket cut to shape... and I've gone through hundreds of pounds of grain.
