I use a Milwaukee MW102. It's a pretty good meter. If you buy a meter and find you constantly need to re-calibrate then you've probably wasted your money as it's not reliable.

It does have an effect on the spirit, all negative. I would recommend browsing Amazon or EBay for some hardwood activated charcoal. You can filter the spirit with the charcoal to achieve what I believe you're looking for. Do some searching, you'll find a few threads on it.

I use a similar temp controller. STC1000+ has been programmed to accept several differ fermentation profiles. Please keep in mind my statement about leaving the product in the bottle for an additional year. I found a remarkable difference after that first year, and even more so in the second.

So it seems most general consensuses are rite ..Used barrels with added wood adjunct is the way to go... I believe it's a matter of taste. I've found using a new barrel for bourbon is going to offer the best product. I think that using a barrel a second time works, but not near as well as a new bar...

I've found the heavier oak notes to settle out to some fine tasting bourbon after a time in the bottle. Another year and you'll see what I mean.

No so bad really. I find filling them with hot water, 150ish degrees and soaking them in hot water over night will swell them up just fine. I find this the case unless the barrel was unfit to hold liquid to begin with.

Bread yeast doesn't ferment too well in the 70s. It likes temps in the 80s and lower 90s. I'd recommend checking some LHBS and see if anyone carries an American Whiskey yeast even 05 would be better than baking yeast and that's pretty easy to find.

I have two barrels that I use to hold a water bath for my fermenters. I put the tank heaters in the waterbath and it holds my fermentor at a desired temp.
