Ok, but the temp on the thermometer is the actually temp of the vapor coming up through the still correct? Yes it is. Copper in the tower cant hurt anything at all. If anything its is a benifit as it cleans your vapor of sulfites. Packing in a pot still column
This may have been answered before, but if one was to put copper mesh in a 1.5"x 30" column on a pot still would it make a cleaner spirit or even a little reflux?

I would go with the biggest boiler you can. You are wanting to build your own later. So why not get the boiler that you can use later. No need in wasting money on something that you won't use later. 3 gallons quite small. For a few reasons. 3 gallons you could only charge it with around 2 gallons. ...

If you don't want to build one there are plenty of places to buy one depending on your budget. However, I wouldn't go anything smaller than 5 gallons and even that is pushing it. Go a little bit bigger and save yourself spending more money on a new boiler later on. Read up and good luck.
