Just wondering if bakers yeast would be the only yeast that works well for this.
I have distillers yeast, thinkin that might do the trick as well

Made a corn mash proximately six months ago with high temp enzyme low temp enzyme
Covered and let fermerment out and wasn’t able to distill just opened up smells fine has typical sour taste is it still OK to run do you think

well a couple years late but started with 4 gal pot revamped leibig, made bigger and wrapped a large wire around the inside pipe so the water would spin around the inner distillate pipe for more aggressive cooling. then went on to 2" column with double reducer and double wound helix coil on top...

I think you will find the need to knock down the cap daily as you will be prone to bacterial infections forming on the drying banana cap. after a few days of knocking down the cap it will slowly sink into the wash on its own, and the wash will clear if one allows time to do its thing

could probably get a better yielding and flavor for a few dollars more if you just went to a food distributor that services the food industry. Cant remember how much but I got five gallon bucket (60 lbs) of table grade, the good stuff for a real good price, Rum for everybody.

mine came off at 7% potential before the sugar addition. the amount of sugar used 10 lbs came out to be around 7% also for the size wash I did. hope this helps

the reflux will give you a cleaner ,less flavor than the pot still. imagine a sprit that has little taste like this one then removing all but 10 % of it .that's what you have if you use a reflux. hope this helps

I see in some of the post that the cask also develops some character as well. Could any of you tell me your cask of choice or what you believe to be the best cask material . I'm assuming oak but I've been wrong before ,just ask her. Any input will help .Thank You

I had pickle buckets ,and the use of some good old lemon juice worked wonders. put a half gallon or so in the bucket and shake it up,keep doing this throughout the day and rinse good after a day or two it will not have any odor. happy fermenting

I take my rum ,add a vanilla bean split length wise.50 raisins,and let it sit a month or two.it really mellows it out ,i cut it to 100 proof and its fine drinkin

I like taking white dog rum and throwing a vanilla bean and a handfil of rasins in it and let it sit for a few weeks.nice amber color with a very nice bite of vanilla and a sweet punch of the rasins.It works for me ,I hope it works for you.
