You think you get funny looks for buying sugar? Try buying two sacks of corn, asking for the stuff without soybean oil, and possibly a bucket of feed molasses...while wearing slacks and a tie and loading it into a little Toyota commuter car.

I just spread apple wood chips on a cookie sheet and heat in the oven at 350 for several hours. I get plenty of flavor and color. I leave the charcoal for the grill.

I've done a sugar head over Booners, but I used corn sugar instead of cane. It cost a little more but has none of the bite. 50# of corn sugar (look for dextrose) runs about $35 at Cash N Carry.

That looks like a lot of rigging. Couldn't you just set up a water flow sensor to cut the source of heat if the coolant flow fails? That would catch a variety of problems beyond simple pump failure.

I'm sure the yeast would enjoy some raisins. I'm not sure if they are necessary but they don't hurt anything. For more of an all-corn experience, try corn sugar instead of cane. There is a difficulty with setting a control to check your research. How do you take samples from the same batch, to eliminate variances between runs, and side by side compare natural aged to your process?

I think you missed the point. You really can't make good cuts based on abv. You need to rely on taste and smell. Don't underestimate the sensitivity of that organic neural network inside your skull.

Wishkah River in Aberdeen is a nice tour if you're out that way. There's also a brewery and winery in Westport. The winery has a great restaurant. (Save room for desert.)

The coffee filters are good for the initial airing out but after a day or two you need to seal the container otherwise your alcohol will evaporate. Did you check the final proof on that stuff that sat open for 6 weeks. I use a carboy with a natural cork stopper and age for as long as I can stand it....
