My run of honey mash turned out very nice. It seems to be a good all around brew high proof low proof with or without oak. I really enjoy this

I have enjoyed the read on this thread. I started a honey mead over a month ago. fermentation is going very very slow for me. I have half a mind just to run it as is.

just an update. When all was said and done i ended up with a little less than a gallon of 40%. It has a very strong flavor and taste. It is in desperate need of aging. I am currently running a watermelon mash. I blended two average sized watermelons minus the outsides. Added ten lbs of sugar to water and fermented with lavlin ec-1118. For me it had nothing to do with greed. I'm still new to the hobby and quickly learning what does and does not work. Some from reading here and some from trial and error. In this case it was a combination of the two.

Welcome to HD. Dont let the results get you down. On a really bad run sometimes I clean it up by redistilling, sometimes ill filter through carbon. I have found a combination of carbon filtering, airing for 24hr, and oaking will turn my worst into something not half bad.

I have the same issue. If I use three pounds of sugar per gallon I will finish up around a week and a half. When I use five pounds per gallon which puts me a lot closer to the potential 18% ABV it will take me weeks.

I wish it was legal hear. I fill like the dont sell dont tell and since i product such a small amount."personal drinking stock only" i am a little safer than the people cook up 100g batches . But it would be nice to one day enjoy my hobby with out any fear
