My bad, I ASSuMEd you were speaking of the brewing yeast. I've never seen the Saf-Instant blue label yeast, just the red label til now.

The blue label is S04 strain of yeast. Typically an ale yeast, lending slightly fruity and floral notes. I have yet to use any but have a few satchet in my stash.

On a related side note, when you drive by a petrol tank farm look at their tanks covered in black mold from the ethanol added to gasoline nowadays.

With such a high finishing gravity I'd say you're probably scorching some of the unfermentable sugars. As mentioned, some added enzymes should get you into a lower finishing gravity thus leaving less to be scorched.
