This guy built a tumbler out of a plastic drum and a wiper motor
the constant motion prevents any mould growth ,best idea i've seen
similar to the way it's done comercially

What works for me is using home made tomato juice. dead easy to make,throw fresh tomatoes in the blender just remove the end bit ,but buzz em up pips and all boil the resultant pulp for 15-20 min with a bit of salt and sugar ,refrigerate and use it will separate in the fridge but I make em 50/50 ice...

It seems to me there may be an easier way to control your temperature , the same way most industrial machines do it ,using electronic's designed for the job there are a wide range of digital temperature controllers available for a reasonable price here is an example http://www.ebay.com/itm/100V-240V...
