Nice job. That looks like a heavy duty flowswitch and using a contactor to remove the power independent of the SSR is the way to go.

You need to look at the concentration of the muratic acid you buy to determine how much dilution water is added. I did a spot check on the Lowe's website and they have it at ~15% and ~31%. I am thinking of a totally separate safety circuit independent of the SSR (SSR controls power to boiler) that would be controlled by the flow switch and/or other safety devices. Anyone using this type of circuit to shutdown their still should disconnect it from its source of power ie gas or electrical. If you use propane or natural gas then there should be an appropirately sized solenoid that would be energized (normally closed valve held open) to allow gas flow to the burn...

I have made kefir but I don't think kefir grains would be able to generate enough alcohol to make it worthwhile for distilling. Just my opinion.

Based on my reading/research on this site 1/4" worm is too small. The preferred minimum here is 1/2" though they say you can get by with 3/8".

Checkout the Tried and True section there are Rum recipes there that should give you information to determine the ratio or just use one of those recipes since it has been proven to work.

I would definately use it for cooling water. You could pump it to your condenser and then put it right back in the stream.
