Re: Preferred methods to remove spirits from barrels?

I'm anal when it comes to plastics exposure, so this is my method. I pressurize the barrel with an aquarium pump and use a copper tube to deliver the product from the bottom of the barrel to my receiver of choice, usual one gallon jugs. It may take longer than rolling it over and dumping from the bu...

Re: mason jar lids

Teflon lids breath quite a bit. Check your ABV over time and you will see. I think they are more permeable to alcohol than water since I always get an ABV decrease, unlike my barrels, where it will go up or down depending on the RH. I use them as a way to air my spirits for awhile, then cover the Te...

Re: Hello from western PA!

Hi Jim, I sort of already did, but I'll do it again!

About a month ago (maybe 2?) my wife and I stopped in for our first visit. I had a nice conversation with Ellen back in the tour tasting room and then with you at the bar.

Salut!

Hi Jim. Nice distilling scene in Washington and that burgh to the north. I'm with Yinzer, your rye and peated bourbon are tasty. I'll be back, maybe on my next trip to see the kids.

1. don't know, off grain only. 2. Like the grain(s) you mashed. Aging changes it to something else. I've come to appreciate keeping it white, as I like the detailed tastes of the mashed grains. You can pick out the ingredients. Not so much after aging on wood. 3. don't know 4. I'm getting there. Fro...

Re: Old grains

der wo, how do you know old and possibly fucked up grains don't make a decent drink? You've made some strange shit. ShineOn, why not mash it. If you're worried about DP, add some enzymes. If SG is low, add sugar. Whatever you do, it's all fun and educational.

Re: mason jar lids

Might want to be careful with really thin ptfe sheet. I use 0.04 inch thick for mason jar lids. When used with just the ring to hold them on, the ptfe disks are permeable to our spirits. I can see it by the abv drop over time. Want to see something freaky, take some ptfe tape and soak it in some hig...

Re: Ginger Liquour

Recently ran across this recipe again and just made a trial half recipe for my wife. She's a ginger fiend. She gave it two thumbs up (even though it's still too sweet for her taste). Said it will be good on the boat this summer. I used 5/8 cup sugar instead of the originally prescribed 1 cup. Next t...

Re: A Tale of Two Bourbons

Small craft distilleries are fun, but the big guys have been at it for a long time. Lots to learn there if you pay attention. Bonus: it's beautiful country, and damn, bourbon flights are fun.

Re: A Tale of Two Bourbons

If you saw the size of their operation and their rickhouses spread all over the place constructed of different materials, you would better appreciate it. Add a couple different mash bills, entry proof, and age to the mix, you get lots of variation. For a real treat, take the time to go down to Kentu...

Re: A Tale of Two Bourbons

Buffalo Trace is right up front on their tours identifying rickhouse and level for each brand. Blantons here, Eagle rare there. Etc, etc. I think you've seen the effect of storage conditions on your own juice. Can you imagine the differences you get when you have so many different locations to store...

Re: A Tale of Two Bourbons

What the link says is what I've understood, and that is they are the same juice. That was the point of the homework. Side by side comparison to examine the effects of time and aging location on the same distillate. Fun stuff. Just like your experiments/experiences.

Re: A Tale of Two Bourbons

I have a bottle of Jim Beam Black thats 8 years old and still has a hell of a spank. Knob creek is 9 years old and has that same fresh wood varnish character, but somehow balances this wood resin varnish thing with smoothness and incredible drinkability. looks like someone's done his homework. http...

Re: A Tale of Two Bourbons

Sorry, can't agree with you on that.

If i made enough new make, I'd be able to do a comparison. I've got a couple unused staves from ISC, as well as ample used ones. Maybe I'll do a quicky UJ batch and see what I can do.

Re: A Tale of Two Bourbons

The reason I asked Jimbo, is that I don't consider sticks cut from used barrel staves as being used sticks. I consider them half used, half new. The inner surface is certainly used, and the inner half of the side surfaces are partly used. The outer surface and outer half of the sides I consider unus...

Re: A Tale of Two Bourbons

I think the key to the rich deep flavors was all the sticks I stuffed in there, ~20, cut from Jack staves and recharred. All the wood being used once, the fresh wood astringency was washed away and it was just a slow caramelization over 2 years. You say your sticks were used once. What did you soak...

Welcome from another SE michigan resident. Snows Channel. That the one with the house/island kind of in the middle that I sailed past? I can see why you'd want a place there. A lot of sweet boathouses and boats in those parts.
