Re: uncle jesse's simple sour mash method
I'm attempting to use this recipe for my first run and I have a few questions. I will apologize ahead if any of them are stupid. 1.) Do I have to keep the fermentor at 75 degrees with this recipe? 2.) On the wiki, it says to add all the ingredients and close the fermentor. Do I use an airloc...

Re: Foreshot amount question...
So with a one gallon pot I should be safe by taking off two shot glasses (3.2floz) or 100ml of foreshots/heads? Should I take off any more heads? Reason I ask bc I only collect about a quart a run at best that is including what I think is a low amount of heads and all the hearts and some.tales. Yes...

Re: uncle jesse's simple sour mash method
I read in the either the UJSSM or the Sweetfeed thread about somebody taking the first generation distilled product and saving it all (80% - 60%). They are creating the Gen2 mash with the Gen1 backset and then when they distill Gen2, they throw the distilled Gen1 that they saved into the still for ...

Re: uncle jesse's simple sour mash method
I started with 5 gal bucket of mash. I first did a run of 1 gal. got a quart of 100 proof. Dumped out 60% of the pot leaving 40% in the pot. Then I added the quart of 100 proof back in the still. Now I have about 60% of my still full with backset and the quart I just distilled. So then I filled it u...

Re: uncle jesse's simple sour mash method
So ur saying use about 40% of the backset that left in the boiler then add what I distilled back to the boiler no keep your alcohol you distilled. take about 1 gal of whats left in the boiler to dissolve your sugar and add that to your corn and water and that becomes your second batch. if doing a 5...

Re: uncle jesse's simple sour mash method
the wash is about 10% so 50% is about what you will git in one run. if you want it higher you will need to run it again. dont put it back in the fermenter it mite kill the yeast. if it was me and want it higher proof ,id do several stripping runs then when you have enough to fill boiler (at 40%) do...
