And as usual I was abit off topic with my first post..I reviewed your post history and didn't see pictures of your equipment..The plates you are talking about, their spacing, gauge etc..To close, to far apart etc..5" to 7" ish I believe you will be ok..Smaller rigs closer, 4" rigs far...

Brandies should be 1 or 2 plates for the flavor and stretched out run you're looking for..More plates, more abv and less total volume for the run. I'd suggest 1 plate run, build you a jar from the center and blend a tsp of tails, and maybe the very end of heads for reference and a drink..Pour the re...

Yes, but the perfs I have were stacked 4 high. But I noticed abit more raw flavor with perfs... Seems like caps do a cleaner, more refined drop. Take note that not all perfs or caps are the same design and specs..Hole counts, diameters and unique, sometimes even single cap plates are everywhere yet ...

Rule of thumb for just a straight riser (packed) for reflux is 36" I believe. Just sayn, you are talkn up to around 13gal runs. Time is money, even ifn its free. It'll take a minute to charge, then no overkill for additional accessories like Carter gin head, torpedo, or the like. I like overkil...

Sounds like your pretty close to being on track.
Rule of thumb for tossn fores/heads is 8oz for every 6gal charge.
I toss 8oz per 5gal charge volume.
Stay there and you'll always be safe.
Strip runs racked clean, run hard to sweetwater taste at 20%ish..Equal to a strong wash.

The perforated plate needs to be top of collar height with cap pushed down ready.
Wanta keep charge level rite below cape.
Valved in and out for preferred reflux tuning.
Maybe slightly 'dome' the flat top of the cap to enhance reflux.
Sight glass above plate on cap to monitor and learn.

A taller 'Tennessee' style cap likens to what Popcorn used, a wide wound condenser coil at the top of the cap, a large perforated plate at the bottom of the cap.
Maybe something there..But no perf plate, no purpose for reflux coil.

I believe the "pieces" you're referencing would be 'modular' pieces. Modular would be the most efficient way to get the most out of your setup. 2" base is the norm, 3" base charges and runs faster. Conical 3×2 adapter/reducer at the base for that. Then you can run 2" for ris...
