I remember reading that a lot of Belgium brewerys use two yeasts. One for fermenting and the other for bottle conditioning.
This may be the reason for the differance in taste!!

Just made some strawberry and peach. I found the recipe while I was stripping some UJSM so I took some hearts and gave it a try.
I will tell you what, it takes for ever to filter!!

I have 2 early Bokas, the 3 piece and the one with 1 fixed plate, both do a ok job as a pot still but I going to build a lyne arm and a liebig and turn them into pot stills.

Heads and Tails Flavoring.

Instead of redistilling has anyone just combined them to make a heavily flavored cordial like Limoncello??
Would it work??
I make a lot in the summer and I really don't want to use my good stuff.

I didn't realize that higher fitting was a feed, I just thought it was there to strengthen it.

Great, simple design. I see you have it filling from the bottom. Do you think it makes a difference as most of the ones I have seen fill from the bottom side??

Regular baking yeast will work just fine... Some of the yeast in the health stores is dead rather than active and is intended to be eaten for its nutritional value... I buy 2 - one pound vacuum sealed bricks from Sam's Club for less than $5.00 which is far cheaper than individual sachets that usual...

It was backset!! The tails were coming out really funky so I stopped!! What I started with was a 10g batch of 11% apple cider stripped to 2.75g of 40% Redistilled, I collected approx 4l down to 60% collected in 200ml containers which is when I stopped. Couple of questions!!

Just double distilled some Calvados. Strip run then a spirit run. I am left with about a gallon of 10% backset can this be added to a vodka distill I am going to do next or not??
Do you guys clean the column after every run. (Water/Vinegar)??

Hi Guys,

Just starting a batch today, my question is would the first distilate from the first ferment make a decent whisky or should I add it back into the still with the second sourmash ferment as UJ recomends.

Thank you very much for the info.
I have always used vodka with no problem, there are lots or recipes, but none for the high proof.
4 cups per liter seems to be a good place to start for all my cordials.

Sorry, I guess I should have been a little clearer. It is a regular suger wash with turbo yeast. Mine is a milky white colour!!
