I remember reading that a lot of Belgium brewerys use two yeasts. One for fermenting and the other for bottle conditioning.
This may be the reason for the differance in taste!!

Hi Guys, Going to do my first spirit run on around 6g of stripped UJSM. The stripping was done with my 1 1/2" Boka wide open with no packing. Should I add a couple of scrubbers for the spirit run? Also, if you have any advise or pointers that would help me out so I don't screw it up. Does it ma...

Heads and Tails Flavoring.
Instead of redistilling has anyone just combined them to make a heavily flavored cordial like Limoncello??
Would it work??
I make a lot in the summer and I really don't want to use my good stuff.

I didn't realize that higher fitting was a feed, I just thought it was there to strengthen it.
Do you think it helps on the readings??
I like it!! I hope you don't mind but I might build something similer!!

That's what I was thinking of.
Great, simple design. I see you have it filling from the bottom. Do you think it makes a difference as most of the ones I have seen fill from the bottom side??
Thanks,

Thanks,I will aim for somewhere in the middle.
I will post a picture of the head design as I am thinking I will have to offset it to take some of the weight off one side of the boiler

Regular baking yeast will work just fine... Some of the yeast in the health stores is dead rather than active and is intended to be eaten for its nutritional value... I think I must have run the spirit run to fast ...

Re: uncle jesse's simple sour mash method
Hi Guys,
Just starting a batch today, my question is would the first distilate from the first ferment make a decent whisky or should I add it back into the still with the second sourmash ferment as UJ recomends.
Thanks,
BB

Re: Limoncello Question
Thank you very much for the info.
I have always used vodka with no problem, there are lots or recipes, but none for the high proof.
4 cups per liter seems to be a good place to start for all my cordials.
Thanks,
Neil
