Rye funky smell

Hello All I am doing up a corn rye whisky. I had hopes of the whisky loosing a funky smell I have distilled 2 times an the resulting sprit run netted about 6 gallons of good good, so I thought. It sort of has a funky smell like sweaty feet or butt "ha ha ha". I have this sitting on oak now...

@Swedish Pride Definitely some good knowledge in here for sure. Don't do what I did and do what they say. Eventually I quit doing what I thought I knew and DID what the ol salty boys were saying. That's where I got to where I am now. Which I can say was A fun journey. Not easy nor short but fun none...

36 hours in and the color is excellent, starting to notice some oaky vanilla aromas. Now to put it away and forget about it

Should the conversion from the corn starch solid to complex sugar be done with the sebstar-HTL and iodine test come back negative for starch ? Then the Sebamyl will convert the complex sugars to simple?

Sour tasting distillate

Any one experience this. Will citric acid come over in the distillate? This run was very sour even bitter maybe. It is a 75ryeUM 20wheat UM and 5 6-row
I had issues with the ferment but I got about 2gallons from a 13 gallon wash

Runs ok but tastes like poison in a bad way! Like Heads on steroids smells ok tastes like rye. Showing 210F at the head and coming off at 40 proof
