Planning on making whiskey from each of those? Or for other purposes?
I am. Used some of the butcher from last year already, it's surprisingly fruity.

Re: Corn Neutral Spirits

Does anyone use 100% corn at the home scale? I have been for a while, but struggle to make a really nice neutral I primarily make AG vodkas (not neutrals), running most every cereal grain I can get through a 2" CCVM, and have had many corn batches go completely transparent in taste and odor. T...

Corn Neutral Spirits

Corn neutral spirits would be basically Booners taken to azeo correct? I'm aware most on the home side of things just use sugar for neutral spirits. Does anyone use 100% corn at the home scale? I have been for a while, but struggle to make a really nice neutral without sending it through the still (...

Re: buffalo trace - white dog.

See I had some Buffalo Trace White dog in 2021 and thought it was excellent, I'll approach it with more of a critical eye tonight as I almost always leave bottles at 20% full so that I can have tiny sips much later rather than buying a new bottle. Anyways, it has an extreme buttery smell and smooth...

Re: Continuous Stipper Build

Yeah, that's Abbott's rig from Telluride. I'd have to go back and read through that thread again, but I think his efficiency issues are really just because he isn't recovering BTUs? He may have been capturing BTUs at the PC? But he wasn't doing anything about heat going down the drain as column bot...

A distillery in Missouri makes a 100% Bloody butcher corn whiskey. If I remember correctly Bloody butcher has a bit of rye character to it, spice and such not much mint as recall.

Re: Power Fluctuations

Yes on the meter side. I'm pretty sure I have seen a 10v swing at some point.. my scr (a bit fancier 11k version) must be compensating somewhat for the swings.

Power Fluctuations

I have noticed on my 5.5k electric boiler that there are power fluctuations, sometimes .5a or more. This seems to be on the mains side of things. I run a scr base controller and read volts on the mains side and amps on the load side (this seems pretty accurate). I have problems when trying to fracti...

Re: Why is corn and rye alcohol NOT made by malting (rather than gelatinizing) the grain"

Simple answer, malting cost more money. Malted grains do have a different flavor. Also in countries other than the US, they were taxed by the amount of malt used, so the amount of malt went down over time.

Mashing in grains (hydrating) below their gel temp then heating past their gel temp, works well.

Re: Is yours really better than commercial?

I despise the nail polish of heads in every commercial bourbon I've ever had. But in my own aging process so far, but having just a c-hair of them never fully develops the typical bourbon style. Maybe I need to let it all age longer I recently listened to an interview with a large distillery head d...

Re: Butterscotch Rye

How “dry” was the ferment? “Butterscotch” indicates caramel in the flavor profile, and that would be from sugar caramelizing under heat. Finished at .995 with a couple extra days to clean up. Everything was steam cooked and stripped. Used whole cereal rye from a local farmer. The thing is there was...

Butterscotch Rye

Any chemistry buffs out there want to take a stab at this. I have a 55 rye 45 corn finished and proofed to barrel entry, sitting in glass waiting for a barrel. After sitting for about a month, I had a taste and it is straight up sweet butterscotch candy with a hint of the rye mint in the background....

Re: steam stripping on the grain

I feel it's more a factor of direct heat vs indirect heat. Direct heat with will cause different flavors than indirect. Steam stripping on the grain hasn't caused any adverse flavors in my experience. Side note 99% of commercial Bourbon is distilled on the grain.

Just done a 55 unmalted 45 corn. White i get a lot of pepper and mint/menthol. Not real sure what I think about it yet, don't think I ever had a high rye whiskey White (tho aged rye is my go to).

Thanks. I had thought about angling the plates. My hope was that there was enough turbulence to keep things moving, but if not it won't take much to change some plates around. I really need to get it fired up, but this year has not been very cooperating.

Turns out,,408 watts, per gallon/per hour is a pretty reliable number. So if you are looking for a feed rate of 40 gallons an hour, you'll need 1632 available watts. That input is predicated upon a measure of heat recovery to preheat your beer injection temp. I'm not sure what you would need if no ...

Hey guys, have a similar question regarding conversion of corn/grain starch. My understanding has always been that sufficient amounts of amylase (from added amylase or from malted grains) in the mash will convert all the starch from any non malted grains (as long as the proportion is sufficient).
