See I had some Buffalo Trace White dog in 2021 and thought it was excellent, I'll approach it with more of a critical eye tonight as I almost always leave bottles at 20% full so that I can have tiny sips much later rather than buying a new bottle. Yeah, that's Abbott's rig from Telluride. I'd have to go back and read through that thread again, but I think his efficiency issues are really just because he isn't recovering BTUs? He may have been capturing BTUs at the PC? But he wasn't doing anything about heat going down the drain as column bot...

A distillery in Missouri makes a 100% Bloody butcher corn whiskey. If I remember correctly Bloody butcher has a bit of rye character to it, spice and such not much mint as recall.

Yes on the meter side. I'm pretty sure I have seen a 10v swing at some point.. my scr (a bit fancier 11k version) must be compensating somewhat for the swings.

Simple answer, malting cost more money. Malted grains do have a different flavor. Also in countries other than the US, they were taxed by the amount of malt used, so the amount of malt went down over time.

How “dry” was the ferment? “Butterscotch” indicates caramel in the flavor profile, and that would be from sugar caramelizing under heat. Finished at .995 with a couple extra days to clean up. Any chemistry buffs out there want to take a stab at this. I have a 55 rye 45 corn finished and proofed to barrel entry, sitting in glass waiting for a barrel. After sitting for about a month, I had a taste and it is straight up sweet butterscotch candy with a hint of the rye mint in the background....

I feel it's more a factor of direct heat vs indirect heat. Direct heat with will cause different flavors than indirect. Steam stripping on the grain hasn't caused any adverse flavors in my experience. Side note 99% of commercial Bourbon is distilled on the grain.

Just done a 55 unmalted 45 corn. White i get a lot of pepper and mint/menthol. Not real sure what I think about it yet, don't think I ever had a high rye whiskey White (tho aged rye is my go to).

Thanks. I had thought about angling the plates. My hope was that there was enough turbulence to keep things moving, but if not it won't take much to change some plates around. I really need to get it fired up, but this year has not been very cooperating.
