Hey, if I'm pitching bakers yeast would I do a tablespoon like the UJSSM or the 225 grams like Birdwatchers? I would also imagine some DAP would help? This would be for a 5-6 gallon batch.

Did the 16,000 bond cover the tasting room also or is that a separate bond? I'm assuming separate. So you yearly bond would have been $21,000.

Look at the top of your meter. That is 1.100 not 1.010. You probably just read it wrong. EDIT: Other way around. Your alcohol meter should top out at 1.000. So Lees are all the yeast, etc left over after you siphon off the liquid. Backset is the left over mash/wash/beer out of the still when you are finished with a run. So how do we define Trube?
