I think there is too much obsession in keeping ABV to around 60ish for barrel aging .This might be a thing for Whisky . And Whisky is usually done in cool places … Scotland , Tasmania, New Zealand . A better filter can be made by using a Stainless Steel pipe and fitting a needle valve on the bottom . Fill it with activated carbon . Such things are also available off the shelf.

However, with good distilling practices and equipment , filtering shouldn’t be necessary .

How much acid is required to shift the pH depends on how much dissolved material is in the water in the first place . Water municipalities normally adjust water pH at the treatment station to pH7 by adding chemicals . How much they add will vary quite a lot throughout the year as the mineral content...
