Oat Whisky
So I had all these odds and ends lying around, 1/2 lb of wheat, 1 1/2 lbs of steel cut oats, and 2 lbs of malted barley grains, so I mixed them with three gallons of water, 5 lbs of sugar, and for measure, I had a can of nut brown ale syrup lying around which I also threw in there! Boiled it on low ...

Re: Scotch Whisky
I'm new at this so I was under the impression that malting the barley increases sugar production. As far as boiling the mash, is that not the way to do it? I was following a recipe I read in a book.

Scotch Whisky
Though I'm a bourbon drinker, I've always been partial to a good, single malt scotch, so I decided to give it a go. I got 2 pounds six row barley, which I malted by placing in a bulap bag and keeping it moist by hanging it up in my porch and running water over it once a day. After two day, it starte...

Passionfruit Brandy
I tried this again without adding any yeast nutrient and it came out beautiful! Six pounds passionfruit pulp, one gallon distilled water, 2 lbs sugar, 1/2 cup malt powder, and 2 oz yeast. Run came out at 80 ABV and has a very definite and pleasing passionfruit flavor. I got 2 quarts, one which I'm a...

Re: Passionfruit Brandy
Thanks to all. I tossed it though Zeig, I've heard others say what you said about redistilling it, but I did some heavy cleaning as you said and am running a batch right now as I write this and it's coming out tasty and clean. Thanks for all the feed back everyone!

Yup, Windex is exactly what it looked like. Got a new batch fermenting right now. I've cleaned the still as per everyone's recommendations and will try a new run of Wednesday. Thanks for all the info.

Sounds good, why take a risk. I'll dump it and chalk it up to lesson learned. Watch the nutrient levels!

Blue Run
I made some passionfruit brandy the other day. Passionfruit, water, sugar, distiller's yeast, and yeast nutrient. I may have overdone the nutrient a bit, but the run came out fine until my tails,at about 195 degrees, started coming out blue. I've read that yeast nutrient reacts with the copper and c...

Re: Passionfruit Brandy
rad, why throw it away? Do you know something about this. Please let me know because I just added the first run to the rest of my original mash so I could run it again. I heard the nutrient makes it blue because of ammonia, but adding the citric acid neutralizes the ammonia, clears up the color and ...

Re: Passionfruit Brandy
Yup, did all that, ran water through the condenser and I used distiller's yeast. I went to a distilling website and there was an interesting topic there. Apparently, if you use too much yeast nutrient, which I did, it can react with the copper making the product blue. It's not harmful and it actuall...

Passionfruit Brandy
So after doing some really good mango and papaya brandy, I decided to do passionfruit, which I bought frozen at the grocery store. I did six pounds of fruit to one gallon of water and two pounds of sugar and two ounces of yeast. I started distilling after five days and it came out beautiful until th...

Re: Mango Brandy
That's a bit strange Ken and I don't have enough experience to give an opinion. I ran some rum a couple of months ago with brown sugar and molasses and it came out really nice. I ran it through a second time, added some natural coconut essence, and cut it to 90 proof and I have it aging in an oak ba...

Re: Mango Brandy
Actually Ken, you're right about that...55 ABV is good enough, but in truth I didn't notice any difference in taste between the two runs. The main reason I did it, and I didn't mention it in my original post, was that I had a quart of older peach brandy I had done which I wasn't crazy about and inst...

Mango Brandy
So I decided to give this a go. I bought fifteen pounds of frozen mango slices, the kind from Costa Rica (in the frozen fruit section of my local Publix), put it in my fermenter with six pounds of sugar and two gallons of distilled water. I added two ounces of distillers yeast and half a cup of yeas...

Testing Tubes
So I bought a plastic testing tube and when I poured my whisky in it, it cracked. I thought it was defective since the whiskey was at room temp. I ordered another one and I just poured my whisky which I distilled twice into it and it literally shattered. Again room temp, but 170 proof. Is there some...

Re: Coconut Arrack
OK, so today I took my coconut arrack and I distilled it a second time. It came out at 140 proof. I watered it down with spring water to 110 proof and sweetened it with some agave syrup. Mind you, when I distilled it the first time, I let it sit for two weeks with some burnt oak and apple chips and ...

Ok, so I'm going crazy here...I'm in the process of distilling mango brandy and I wanted to try a peach brandy, so I got 4 lb of cut peaches, 2 lbs of sugar, a gallon of distilled water and two qts of peach nectar. I don't know what will happen :D Has anyone made a nice batch of peach brandy and wou...

Just distilled the first batch today. Tastes really good, with a definite tropical fruit taste. Can't figure out the proof since I broke my hydrometer  A new one coming in any day now. Satisfied but now trying to figure if I should add some oak chips for flavor or some burnt sugar for sweetnes...

Re: Fruit Brandy
Thanks Jimbo. Actually, I sort of built the recipe on one I read from another posting where he actually did put in the kitchen sink! Just kidding, but he had three different sugars, four different fruits, cornmeal, and I don't know what else! I'll let you know how it comes out. Thanks.

Fruit Brandy
I'm making my first batch of fruit brandy. I made a mash of passion fruit, mango, corn meal, sugar, and malt powder and I'm going to distill it as soon as fermentation stops. My question to anyone out there who's done this before: Are there any issues with methanol. I've heard that methanol is highe...

Re: Coconut Arrack
Maybe if you went to a small Latino or Caribbean store they may sell the real stuff there. We go to Belize every summer and bring back two or three quarts! I have to add though, that the finished product doesn't have a strong coconut flavor like coconut rum. It's very subtle, but good nonetheless! I...

Re: Coconut Arrack
No problem, ask away! OK, I forgot the yeast, I used 2 oz of distiller's yeast. The coconut oil is for flavor, but you need to buy raw, unprocessed oil, not the stuff you get in the store. My wife is Belizean and we get it from there and it's amazing. As far as the malt, I added it for flavor, body,...
