Re: Jokes
A teacher asked her third grade class to name things that ended with the suffix "tor" that ate things. The first little boy said, "Alligator." "Very good James, that's a big word." The second boy said, "Predator.." "Yes, that's another big word Alan. Very...

You're living proof that genius has it's limits, but stupid doesn't !
If someone donated you half a brain....you still wouldn't be as smart as a 1/2 wit.

6 Row Joe, didn't adding that much backset stall your wash? If so did you add some calcium to help it out?

Gin Basket
I've been reading up on different methods and would like some input. I'm a pagan, I love the flavor juniper, smoking for 50+ years has limited my ability to enjoy the "floral notes' of other botanical's so I just use juniper with some coriander. I macerated my last (and 1st) batch and it came o...

Re: Gin Basket
I couldn't find any reference to a nylon stocking in the "what not to use" section. I tried a tea basket, but didn't get enough infusion, plus I wanted to keep the dust sizes particles out of the liquid. I also tried directly into the thumper liquid, but again too little flavor. I think I'...

No, today's synthetic stuff. I'm looking for a way to have more surface area for more intense flavor before proofing it down.

We're always between 11 and 13 $$ locally, but I only have to drive 7 miles each way to get it so I save on time and gas money.

I'm glad this post came up. I gave up on rum years ago because I thought it tasted like ass......didn't think it would get better with age, hell, some of it would be drinkable by now !!!

Re: Do you ripitch after a stalled ferment
I just had that happen to me. I added cc and re-pitched yeast. Seemed to me that if the wash ph was that far off, the yeast I started before mixing, would have been killed cause it because it was vulnerable....I also stirred the hell out of it.

Maybe you didn't use a big enough shovel to apply the CC LOL...plus I stirred the mash with a paddle till it got frothy, oxygenating every thing in the barrel.

Re: Hooray for Calcium Carbonate
Well, besides some failures early on in my distilling, I've never had a ph problem (4 years now). I finally had one by adding backset to left over wash along with corn, water and sugar and my ph tanked. I pulled out a ph test kit I've never used and the results of the test was a damn near blood red ...

Corn Rye & Corn Orange Gin
Ok, 1st the gin. I made a gin-like substance in late August, let set till December and then threw in several 1-2 inch pieces of orange peel. When I first sampled it it tasted of too much coriander, next time it was more junipery but lacked something so I added the orange peels. Now it is a smooth se...

No shit Sherlock!! Carbon monoxide will kill you quicker than bad liquor DO NO USE AN OPEN GAS FLAME IN AN ENCLOSED ROOM!! Unfortunately there are at least several accidental deaths every year because someone thought it was safe to use a flame driven heater in their home during Winter.
