My thoughts...

Rum is made and aged in the tropics. Hot, humid, and low temp swings - I'd try to keep it close as possible.

New 5 gal oak barrel is going to oak the shit out of that rum pretty quick. If possible run a batch of whiskey through it first to soften the blow.

Fiberglass welding blanket works well if your on propane and want a little extra assurance that your insulation won't flame up.

Been doin this about a year now, used the yellow extra thick gas line tape and just keep adding more tape to both flanges before a run, haven't cut it off yet. Works like a champ. Not sure if it matters but I always line it up the same way. Also, you can use a razor to clean up the inside so it does...

Nice data hooch. It doesn't look like you had a very long lag phase. Was your yeast rehydrated prior to your experiment? I assume the short lag is largely due to the massive inoculum you used, but it still takes time for the yeast to wake up and get to eating- your data doesn't show this. Any ideas ...

Here's a vote for Woodshed's enzymes. They work dam well, are cheap, and he is a significant contributor to our forum. I used em last week to make a low malt 4 grain. Hit 1.073 at 2.25 lb/gal. First time I've had to water a (ag) mash down before pitching yeast.

Cool experiment but I would argue that total water use per run is a better metric for efficiency than the HTC. You said that you measured flow rates but i didn't see these results. Do you have any water usage data?

The process is called genetic drift. Over continuous feeding and starvation events you would select for bugs that are different then the ones you started with. Yes S-cack. The enzyme yeast use is called invertase - it does the same thing as when you invert on the stove. Yeast chew up the best carbon and energy source first then move on to the second. Great idea with the drops bear. Bought a cheapo pen(~$25) from Amazon that had good reviews. Figured all those people can't be wrong. Calibrated it off my lab's 4, 7, and 10 pH solutions. Crap. Chris, I don't think lldpe - Brute trash can plastic- is good for high temps. HDPE is much more resilient. I think I remember reading 170F was max for lldpe and hdpe is good at temps above boiling water- can't seem to find that source again though. Anyone have any solid info on this? I'd love to ste...

GA are you saying that the gelatin helps clarify the beer and settle out particulates? This would make it easier to siphon above the grain bed. Dam good idea, If i understand correctly isinglass would work similarly
